1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 4 oz Athenos Feta Cheese 3 serving cucumber peeled, raw 1/2 cucumber 1 cup, chopped Peppers, sweet, red, fresh 2 medium (4-1/8" long) Scallions, raw 1 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving) 2 tbsp Balsamic Vinegar 2 1tsp Olive Oil Salt and Pepper to taste
Cook quinoa according to instructions
Chop up red pepper
Cut up 1/2 of a cucumber
Mixed Greek olives
Feta cheese, cubed
Scallions (2-3) cut, or red onion chopped
Balsamic vinegar
Olive oil
Salt and pepper to taste
