Lentil-Barley Soup

2 tbsp Butter, salted 2 tbsp Extra Virgin Olive Oil 1 cup, chopped Onions, raw 5 clove Garlic 2.5 cup, diced Celery, raw 1.5 cup, chopped Carrots, raw 1.25 cup Lentils 0.75 cup Barley, pearled, raw 2 cup Great Value Diced Tomatoes (in Tomato juice) 6 cup (8 fl oz) Chicken Broth
In large pot, melt butter with olive oil. Add salt, pepper, coriander, cumin, paprika, thyme and basil. Cook onions and garlic until tender and translucent. Add carrots and celery and let mixture "sweat" until vegetables start to soften. Add lentils, barley, canned tomatoes and chicken stock. Heat to boiling, reduce heat and simmer, mostly covered, for 40 minutes.
