Gluten Free Monster Cookies

Ingredients
3 large eggs8 TBS whipped butter1.25 C Brown Sugar1 C Sugar.5 Tsp Salt1 Tsp Vanilla12 oz. smooth peanut butter2 tsp. baking soda.1.5 C M&Ms4.5 C GF oats (regular oats can be used if you don't care about the gluten)
Directions
In a big mixing bowl, cream eggs and sugars til smooth.

Add salt, vanilla, peanut butter, and butter and mix well.

Stir in baking soda, oats and m&ms.

You can use chocolate chips, raisins, nuts, etc. instead of the M&Ms.

The batter will be sticky and you'll need to be deliberate about making sure the M&Ms don't slide off each cookie as you drop by teaspoonfuls onto cookie sheet.

Bake at 350 for 10 minutes or so.

Makes about 6 doz 2" cookies.
