Pizza Crust

Ingredients
2-1/2 to 3 cups all-purpose flour1 Tbsp sugar1tsp salt1 pkg regular or quick active dry yeast (2-1/4 tsp)3 Tbsp olive or Vegetable Oil1 cup very warm water
Directions
Mix 1 cup flour, the sugar, salt and yeast in large bowl. Add 3 Tbsp. oil and the warm water. Beat with electric mixer on medium speed 3 minutes, scraping bowl frequently. Stir in enough remaining flour until dough is soft and leaves sides of bowl. Place dough on lightly floured surface. knead 5 to 8 minutes or until dough is smooth and springy. Cover loosely with plastic wrap and let rest for 30 minutes.

For Pizza divide dough in two.
For thin crust: grease two 12" pizza pans. Pat half the dough on each one. Partially bake at 425 degrees for 7 - 8 minutes, add toppings and bake 8-10 minutes.

For thinck crust: Grease two 9 x 1-1/2 pans. Sprinkle with cornmeal. Divide dough and pat into bottom of each pan. Cover loosely with plastic wrap and let rise 30 - 45 minutes. Move ove rack to lowest position. Heat oven to 375 degrees. Bake 20-25 minutes until just browned add toppings and bake another 20 minutes.

For calzones: Divide dough into 8 equal pieces. Roll each one into a circle. Add sauce and toppings to half the circle. Bring the other side over and seal the edges. Bake at 375 degrees about 25 minutes.
