Squash Bread

Ingredients
3/4 cup egg substitute2 cups sugar2 cups grated zucchini3 cups flour1 tsp. baking soda1/2 tsp. baking powder1/2 cup oil1/2 cup unsweetened applesauce3 tsp. vanilla1 tsp. salt3 tsp. cinnamon
Directions
Grate squash and set aside. Beat egg beaters until light and fluffy. Add oil, applesauce, sugar, squash and vanilla and mix well. Add flour, salt, soda. cinnamon and baking powder sifted together. Mix well. Pour into 3 greased and floured loaf pans. Bake at 350 for 1 hour.
