Sri Lanka spiced beef Instant Pot IP

1 lb lean stewing Beef1.5 large chopped Tomatoes 2 medium Onions, sliced1 clove Garlic, minced 2 tsp Canola Oil1 Tbsp Sri Lankan Roasted Curry Powder homemade
Heat oil in IP on saute and cook onions until soft. Add garlic and cook a little more. Add beef and turn off.
Blend tomatoes and pour over beef. Stir in about 1 Tbsp of the curry powder.
Pressure cook for 20 minutes and allow natural release (takes about 15 minutes).
Thicken with a cornstarch water mixture (not calculated) if desired, on saute, and/or boil off some liquid.
Serving Size: Makes about 5, 1 & 1/2-cup servings
