Zucchini Lasagna

Ingredients
1.5 cup (not packed) Cottage Cheese, 2% Milkfat0.5 oz Mozzarella Cheese, part skim milk1.0 tsp Garlic powder1.0 tsp Oregano, ground0.25 cup, pieces or slices Mushrooms, fresh0.25 cup, chopped Onions, raw0.25 cup, chopped Green Peppers (bell peppers)2.0 cup, sliced Zucchini1.0 cup Tomato Sauce0.75 cup Tomato Paste16.0 oz Beef, 90% Lean Ground Beef from Sirloin1.5 cup stewed tomatoes
Directions
Brown Hamburger, mushrooms, onions, peppers, and seasoning together in large skillet. When brown add tomatoes, paste, and sauce. Simmer on low. Slice one medium zucchini into very thin slices. (I use a hand held spiralizer with slicing blade.) In a smaller baking dish spread a thin layer of meat sauce. Then a layer of zucchini. Then layer of cottage cheese. Sprinkle 1/2 mozzarella. Layer of meat sauce. Layer of zuchini. Layer of meat sauce. Sprinkle the rest of mozzarella over top. Bake at 375 for about an hour. Let dish rest for a few minutes before cutting. Enjoy Serving Size: 8 2x3 inch squares
