2 cups vegetable broth1 Tbsp Wakame (seaweed) finely chopped2 Tbsp water1/2 c. soft tofu4 Tbsp chopped scallions1 Tbsp miso paste
makes 2 1-cup servings
--finely chop wakame and place in a small bowl.... use a few tablespoons of water, just enough to cover the seaweed and set aside
--chop tofu into small cubes and set aside
--chop scallions and set aside
--bring broth to almost boil and reduce heat
--place miso in a measuring cup. ladle a few tablespoons of broth and mix the miso with the broth until smooth.
--add smooth miso paste, wakame (with it's water), tofu and scallions to the broth.
--serve in your favourite small bowl and enjoy!
