Ingredients
2.5 c. Bisquick Heart Smart1 c. skim milk1/2 c. applesauce (keeps it moist)2 egg whites (OR 1 whole egg) 1/4 c. flaxseed meal1/4 c. oat bran1 tsp cinnamon1 tsp vanilla extract6 links of Eckrich Smoky Breakfast Links With Cheese inside (each link is cut into 3rds.)
Directions
Mix all the ingredients together, except for the sausage. Spray a muffin tin, and pour mix into the tins. Cut each sausage link into 3rds. Put one of the pieces of sausage into each muffin of mix. Don't worry about pressing it down into the mix, the dough will puff up and cover it when cooking.

Cook in a 350* oven for about 15-18 min. They don't brown like muffins do, but a toothpick should come out dry when inserted into the middle.

This made 19 pancake "muffins". (If you do the math, with 6 sausages cut into thirds, you will have one muffin without sausage.)

My youngest ate his dipping it in yogurt, while the rest of us dipped it into a little bit of syrup. (Mine was sugar free!) Of course, they can be eaten "on the go" without syrup.

    I improvised with a few ingredients: 1)Subst'd low fat sour cream for the appleasuce. 2) used what bran instead of oat bran. 3) used oatmeal instead of flax meal. ALso used Johnsonville brown sugar and honey sausges. They were really good. - 8/17/10

    Tasty, even my family loves them, and they don't like "healthy" food!

    I added two slightly overripe bananas to the mix, the batter was much creamier. The cookies were very soft and less crumbly than original recipe. Yum! - 8/2/10
