1.5 cup, shredded Romaine Lettuce (salad) 1 large whole (3" dia) Tomatoes, red, ripe, raw, year round average 1 cup slices Cucumber (with peel) 4 large (1" to 1-1/4" dia) Radishes .5 cup Parsley 100 grams Cilantro, raw 1.5 serving Byblos 100% whole wheat pita (1 pita) (by THEWANDERER) 2 tbsp Extra Virgin Olive Oil .5 lemon yields Lemon Juice 1 tsp Sumac or sumaq, ground (by CHUCKLES0719) 1 tbsp Extra Virgin Olive Oil
Separate pitas and allow to dry or bake in low oven until dry.
Put shredded lettuce in a large bowl.
Dice tomatoes and cucumbers, slice radishes, parsley, and cilantro, and add to bowl.
To make dressing, combine 2 tablespoons olive oil and the juice of half a lemon. Add sumac and salt and pepper to taste.
Heat 1 table spoon of olive oil in a frying pan and add broken up pita bread. Toss in oil until crispy and warm.
Pour dressing and pita chips over salad and toss well to combine.
