Keto Mint Chocolate Chip Ice Cream

13.5 ounce can coconut cream or coconut milk 1 tsp unflavored gelatin 2 cups Heavy Whipping Cream 2/3 cup Swerve granular natural sweetener 4 tsp Vanilla Extract 1 Tbs Rum 1/2 cup dark chocolate stevia sweetened chocolate chips 1 tsp peppermint extract
Pour coconut cream or milk into saucepan. Add Swerve and vanilla extract. Heat to dissolve coconut solids and swerve. Whisk to keep is smooth. Sprinkle gelatin over mixture and let sit for 5 minutes. Whisk again. Remove from heat and cool. Add the heavy cream, rum, and peppermint extract. Chill. When thoroughly chilled, add to ice cream maker following manufacturer's instructions. As mixture thickens, add in the chocolate chips. When finished, spoon into a plastic container and seal tightly. Keep in freezer.
