2 Large Eggs Beaten1/2 Cup Honey1/4 C LOL Light Butter (sticks)1 Cup Grated Fresh Carrots1 Cup Welch's Berry Medley Dried Fruit1/3 Cup Chopped Dried apricots1 cup chopped walnuts1 Cup all purpose flour1 Cup Publix Old Fashioned Rolled Oats2 Indiv. Serv. Boxes Cheerios 5/8 oz each 1 teaspoon ground cinnamon1/2 tespoon ground nutmeg
Combine Egg, honey and softened butter
Add dried fruit, nuts and carrots
Stir to combine
In a separate bowl Combine flour, oats, nutmeg, and cinnamon, add this to the "wet" mixture" and stir until everything is moist.
Fold in the cheerios
Spay cookie sheet with Pam. Drop well rounded tablespoons (flatten down a little as they do not spread out much at all)
Bake at 350 for 15 minutes
Makes 30 - 1 cookie is one serving
