Tiger Cake

Flour 2 cups, Cocoa powder 1 tbsp, Eggs 3, Grated lemon rind 1 tbsp, Sugar 1 cup, Butter 185 gms, Baking Soda 0.5 tsp, Baking Powder 1.5 tsp, pinch salt, cream 1/3 cup.
Cream together the butter, sugar & grated lemon rind till creamy. Sift the dry ingredients together. Blend into the butter mixture alternately with the cream. Into a prepared baking pan ( I prefer a ring tin ) spoon 1/3 of the mixture. Keeping 1/3 aside, mix the cocoa powder in the remaining mixture. Then layer the chocolate mixture above the white one, top off with the remaining white mix. Swirl the layers with a fork. Bake in a preheated oven 175 deg C for about 45 mins or till done. You can add a dash of rum or sweet wine to the mixture and top with chocolate frosting as per taste.
