Amish Breakfast Casserole

Ingredients
4 large eggs2 small potatoes, shredded1 c. 4% milkman cottage cheese6 slices bacon, cooked crisp, crumbled1/3 c. Diced red onion1 c. Fiesta blend shredded cheese1 1/4 c. Italian blend cheese, shredded
Directions
Preheat oven to 350. Combine all ingredients and stir thoroughly. Oil a 10" cast iron skillet or a 9x9 baking pan. Pour mixture into pan and bake 30 minutes or until set in middle. May be prepared the night before and refrigerated before baking.

Serving Size: Makes either 4 1/4 size skillet servings or 4 1/4 pan servings if using a 9x9 pan
