Mama's Fidello (Mexican Spaghetti)

Whole Wheat Pasta 10 oz (Angel Hair or Spaghetti)Butter Flavored Cooking Spray (Like Pam, or you may use Canola Oil, though this adds calories)Lean Ground Turkey, 1 lb3 cloves of garlic, minced Onion powder. 2 tbspSalt, 3 tspPepper, tbsp(All spices should be added to fit personal tastes)Salsa, 1 cupDiced Tomatoes with Green Chiles, 1 -14.5 oz can Tomato Sauce, 1 -8 oz canWater, 3-4 cups
1. Over medium heat, spray a skillet liberally with Cooking Spray (or Canola Oil) and allow to get hot.
Using a small hand-full at a time, break dry pasta into 3rds and add to skillet. (You may need to add more cooking spray, Brown the dry pasta in the cooking spray/oil. Pasta should be browned, but NOT blackened. Set aside on a paper towel to absorb the excess cooking spray/oil.
Repeat step 1 until all pasta is browned and set aside.
2. In the same skillet add the Ground Turkey, Garlic, Onion Powder (you can use fresh minced onion instead), Salt, and Pepper. The spice measurements here are just a suggestion. Add them according to your own tastes.
Brown the meat with the spices until fully cooked/no pink remains.
3. In a large stew pot add the browned Turkey, Salsa, Diced Tomatoes, Tomato Sauce, and Water. Mix thoroughly. With the burner on high, bring mixture to a boil.
*The amount of water you add will vary depending on how thick you would like your fidello to be.
4. Once the mixture is boiling add the pasta. Lower heat to medium. Cook on medium heat for about 20 minutes, stirring occasionally. Check pasta at about 15 minutes.
When finished pasta should be aldente.
5. Let cool for 5-10 minutes and serve.
Makes 6 liberal 1-cup servings
*I usually serve this dish with pinto beans or black beans.
