Crunchy Chickpea Avocado Salad

Ingredients
4 tbsp Apple Cider Vinegar, Bragg's Organic 1 tbsp Extra Virgin Olive Oil 2 Tablespoons fresh Cilantro, chopped 1/2 teaspoon ground Cumin3 cups Chickpeas (garbanzo beans) 1 can large Black Olives, sliced 1 cup, pared, chopped Cucumber (peeled) 2 small Avocados, cubed6 cups shredded Romaine Lettuce (salad) Crumbled corn tortilla chips or tortilla chip alternative like Beanitos, not included in calorie count
Directions
Drain and rinse the chickpeas.

Mix all the ingredients except the chips and lettuce in a bowl. Let sit at least 20 minutes to marinate.

Place a bed of lettuce on a plate and crumble chips over salad.

Spoon 1/6 of the chickpea mixture over salad.

Calories for choice of chip are not included in the calorie count.
