Zucchini Noodle Caprese

Ingredients
8 Oz Chicken - Boneless & Skinless Breast 1 Tbsp Extra Virgin Olive Oil1/4 Tsp Oregano3 Cloves Garlic 12 Tomato, grape 3 Tbsp Basil, fresh2 Cups Zucchini spiral sliced 10 Bocconcini mini balls, halved1/4 Tsp Salt 1/2 Tsp Pepper
Directions
Season chicken breast with salt, pepper and oregano.
Cut into cubes
In a large skillet heat have of the oil over med-high heat and add chicken. Cook chicken until heated through or for 6 minutes. Remove from pan and set aside.
Heat remaining oil and add garlic. Cook for one minute.
Add zucchini ribbons, basil and tomatoes and cook for approximately 5 minutes.
Return chicken to the skillet and add the bocconcini.
Toss and serve immediately.
