Couscous with feta, tomato and olives

Ingredients
100g uncooked couscous1 chicken or vegetable stock cube100g feta cheese, crumbled6 cherry tomatoes, sliced12 black olives, sliced1 handful of rocket (or other salad greens)1 tbsp olive oilFresh basil and coriander, to taste
Directions
Soak the couscous in 125ml of boiling water, and stir in the stock cube. Once it's cooked, add all the other ingredients to the warm couscous. Season to taste and eat immediately.
