Parmesan Zucchini Saute

Ingredients
2 cups fresh zucchini, sliced2 Tbsp. Olive Oil1 tsp. powdered onion1 Tbsp. grated Parmesan Cheese
Directions
Brush 1 Tbsp. Olive Oil onto surface of skillet or griddle and heat it. Sprinkle with 1/2 tsp. onion powder. When pan is hot, place zucchini slices in one layer in pan. Drizzle remaining oil and sprinkle remaining onion powder on top. When zucchini starts to look cooked, flip it and sprinkle parmesan cheese over top. When cheese looks somewhat melted, flip again. When squash looks semi transparent, it's done.

    Leave out the garlic salt and heat the oil slowly with sliced garlic, better flavour and you don't need the salt with the parmesan cheese. - 6/20/08
