Ingredients
2 C Asparagus, fresh 2 C Qrtd Cucumber (with peel) English or garden fresh small are best2 C halved Cherry tomatoes 6 Green Onions, sliced3 orange Mini peppers, thin stripes 1/2 C crumbled Queso Fresco 4 tsp Grey Poupon Dijon Mustard 3 tbsp Extra Virgin Olive Oil .25 cup Lime Juice .5 cup, Avocados1T mayo 1 tsp Cumin seed 1T Jalapeno Pepper Juice 3 serving Mini sweet orange peppers (1 small) (by CD3370322)
Directions
Break asparagus in 1.5 pcs, blanch in boiling water 30 sec then into ice water
Cut rest of Veggies
Toss together
In food processor add avocado, Dijon, pepper juice, lime juice, cumin, mayo Pulse til avocado is smooth.
Process low pouring in oil slowly til blended.
salt & pepper to preference
Add cheese crumbles, toss lightly, pour dressing over and toss again till mixes in.
