800 grams, 2 normal cans tomatoes, undrained but broken with spoon, or use real tomatoes1 large cubed eggplant with peel2 medium sliced zucchini1 big chopped bell pepper1 big sliced onion6 at least, cloves crushed garlic3/4 pound chopped fresh mushrooms, in big piecessalt and pepper to tasteoregano or herbes de provence to taste
Makes a lot--info calculated on 8 servings but these would be big servings!
Sauté onions and garlic until they smell good and start turning golden. Add canned tomatoes with their juice, break up a bit. Add the rest of the veggies, stirring frequently until the start to get a little juicier as they cook.
Simmer for about 1.5 hours over a low flame and stir occasionally.
Serve in abunch of different ways, read into.
