Ingredients

    1 cup all-purpose flour
    2 eggs
    1/2 cup low-fat milk
    1/2 cup water
    1/4 teaspoon salt
    2 tablespoons melted butter

Directions

Whisk flour, eggs, milk and water together in a large bowl. Mix in salt and melted butter. Batter should be pretty thin. If it's too thick, add a little bit more butter until runny.

If you have a crepe maker, you probably know what to do....

If not, heat a frying pan to medium heat and lightly coat with cooking spray. When pan is warm, spoon out a ladle full of batter and pour into the middle of the pan. Pick up the pan by the handle and rotate until the batter runs to the very edges forming a thin layer batter over bottom of pan. Let cook for about a minute to a minute and a half or until golden brown; flip and cook on the other side.

Fill crepe with your favorite filling such as yogurt, fruit or jams and enjoy!

    Good base for a crepe BUT.. not enough milk! I ended up using about another 2/3 a cup of skim milk to get it to that "crepe" consistency. Added 1/2 tsp sugar as well, which adds that "sweet" dessert taste to it. YUMMY - 4/13/09

    I substituted wholemeal plain flour and unsweetened almond milk. Good taste with less calories. Suitable for sweet and savory crepes. - 2/28/14

    We both enjoyed this. I used fresh strawberries and Cool Whip with mine. DH filled his with ice cream and a spoonful of jam on top. - 11/3/20
