Ingredients

    1 Large Red Onion, cut into large chunks
    4 Large carrots, chopped thickly, skin left on
    1 lb. Red Potatoes, chopped thickly, skin left on
    2 Tablespoons Olive Oil
    1 Tablespoon Rosemary
    1 Tablespoon Basil
    1 Tablespoon Crushed Red Pepper
    2 Cloves Garlic, minced


Directions

Preheat oven to 400 degrees.
Place all vegetables, oil and seasoning into a bowl and combine with your hands.
Put foil on a cookie sheet.
Put vegetables on the cookie sheet and roast for approximately 30 minutes.

    I liked this dish, but was surprised how spicy it was! I made it using carrots, onion, bell peppers and zuchini. I will make it again reducing or omitting the red pepper. - 11/13/09

    I love roasted veggies, and you can substitute freely with your own favs. Mine happen to be onions, mushrooms, zucchini, summer squash & peppers. - 8/19/09

    Incredible!
    This was a wonderful blend of spices with the veggies. I would recommend leaving out the white potatoes...just not much flavor. Add more sweet. Also, the garlic got a little over cooked...maybe add it half way thru the baking process. - 3/24/09
