The tanginess of Zestar apples makes them a lovely centerpiece of this baked apple pancake, adapted from a recipe at Wednesday Chef (wednesday. typepad.com). Any firm, puckery apple will do well, including Cortlands, Romes, JonaGolds and Granny Smiths.
This recipe requires an ovenproof skillet, such as a well-seasoned cast iron. If you have Asian five-spice powder, you might consider using its more nuanced aromas instead of cinnamon.
