Ingredients

    6 eggs
    1.5 cups milk (skim)
    1 cup flour
    3 tablespoons sugar (9 teaspoons)
    1 teaspoon vanilla extract
    1/4 teaspoon cinnamon
    1/2 teaspoon salt
    1/2 stick salted butter
    2 medium-large peaches (thinly sliced w/ peal)
    fresh lemon juice (optional)
    powdered sugar (optional - sprinkle over top before serving)

Tips

You can substitute the peaches for apples, strawberries and pears, or bake without fruit (use 1/4 butter stick instead of 1/2) and squeeze fresh lemon juice over the top before serving.


Directions

Preheat oven to 425. In a large bowl mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended. Batter may remain a little lumpy. Melt butter in a 9x13 dish, in the oven. Add peach slices to butter and return to the oven until butter sizzles. Don't brown. Remove dish from oven and immediately pour batter over peaches. Return to oven and bake on middle rack for 20 minutes or until puffed and brown. Service immediately. Makes 6-8 servings.
