Ingredients

    3-4 large apples
    1/2 T olive oil
    3 T cinnamon
    1/2 pkg of Alpine spiced apple cider mix
    1/3 cup coarsely chopped walnuts
    1/3 cup Nature's Path organic buttermilk pancake mix
    1/3 cup Bob's Red Mill organic oat bran
    1/3 cup all purpose white flour
    1 T raw sugar
    1/2 t salt
    1/2 slice of soft tofu
    1 large egg
    7 T egg substitute
    1/4 cup milk and 1/4 cup kefir or 1/2 cup of either
    1/2 T margarine or additional olive oil

Directions

Peel half of apples; core and slice
Saute in olive oil for about 15 minutes
Add coarsely chopped walnuts
Stir in cinnamon and apple cider mix
Continue cooking for additional 10 minutes, stirring from time to time
Meanwhile combine dry ingredients in medium bowl
Mash tofu with fork in 2-cup measuring cup; add egg and egg substitute; stir together; add milk and kefir and stir
Pour liquid ingredients into dry ingredients and stir well
Add margarine or oil to skillet with apples; stirring to coat bottom of pan
Pour batter over apples, smoothing to cover apples
Bake in 375-degree oven for about 35 minutes
Remove from oven and allow to cool for a few minutes before serving
Top with your favorite syrup or yogurt
