Number of Servings: 8

Ingredients

    2 Granny Smith Apples, peeled, cored, thinly sliced. I've also made it with peaches.

    1/2 cup each of granulated sugar, packed brown sugar

    2 tsp cinnamon

    1 cup milk

    4 large eggs

    1 cup flour. I used whole wheat, you can use whatever you want.

    Pinch of salt

    1/4 cup unsalted butter (1/2 a stick)

Directions

Heat oven to 425 degrees. Lightly oil a 10-inch cast-iron skillet. Toss apples with both sugars and cinnamon in a large bowl. (This is really important to do.)

Mix milk and eggs in a blender or food processor; add flour and salt and mix to combine.

Melt butter in prepared skillet over medium heat. Add apple mixture; cook, stirring often, until sugar melts, about 5 minutes. Remove from heat and pour batter over.

Bake until pancake is puffed and golden, 20-30 minutes. Turn out onto a large serving plate. Serve at once.

Serves up 10, depending on size of piece. I figured calorie count with 8 servings.

Tastes good with topping (whipped cream, syrup, etc.) or without. I prefer it without. Would also taste yummy with warm custard!

    is this the one i'm looking at? you could use 2 eggs and 2 egg whites or even egg beaters instead. you could also use fat free half and half, i'm addicted to that stuff or use skim or cut 1/2 skim and 1/2 2%. - 3/10/08
