Number of Servings: 15

Ingredients

    1 package yellow cake mix
    1 can (11 oz) mandarin oranges, undrained
    4 egg whites
    1/2 cup unsweetened applesauce

    Topping:
    1 can (20 oz) crushed pineapple, undrained
    1 package sugar-free instant vanilla pudding mix
    1 carton (8oz) reduced-fat whipped topping

Directions

In a large mixing bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in x 9 in baking dish coated with nonstick cooking spray.
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving.
Makes 15 servings.

    SOOOO GOOD! I used sugar free fat free pudding mix and lite cool whip, as well as reduced sugar yellow cake mix. When I started to put the topping on the cake it seemed like there would be too much...but after tasting the cake with the topping on it, I dumped it all on! fluffy & DELICIOUS!! - 4/6/08

    I made this at home then at work, it rrrrrrealy good. I think I might try usin half of the cool whip next, I found I had more topping than cake (still taste great). I might try making the topping with the oranges instead of the pineapple next time. - 3/12/08

    I made this cake many times but used a French Vanilla cake mix for the cake portion.. I have had many friends and family try it and all liekd it, even a 5 and 3 year old devoured it in no time.. It's good and decident.. - 4/22/08
