Fat-Free Potato Salad

Ingredients
4 Large Potatoes1 Medium Onion10 T Fat-free Mayonnaise1 T Yellow Mustard1 T Pickle Relish8 Small Raishes
Directions
Boil potatoes until tender. Drain and cool. Peel and dice.

Grate a small portion of the onion and set aside. Chop the rmainder of the onion and add to diced potatoes.

Dice the radishes and add to potato and onion mixture.

Add the grated onions reserved earlier to the fat-free mayonnaise. Add the yellow mustard and pickle relish. Stir to combine.

Pour dressing over the potato, onion and radish mixture. Gentle stir to evenly coat.

Refrigerate and chill completely before serving.

Divide into 12 portions. One portion per serving.
