Tuscan White Bean Soup (GI Diet)

Ingredients
1 Tablespoon Extra Virgin Olive Oil1 onion, chopped4 cloves garlic, minced1 carrot, chopped1 stalk celery, chopped4 fresh sage leaves6 cups chicken OR vegetable stock2 cans white kidney beans (cannellini) drained and rinsed4 cups shredded kalesalt and ground pepper
Directions
In a large soup pot, heat oil over medium heat. Add onion, garlic, carrot, sage(4 leaves) Cook 5 minutes. Add stock beans, kale, salt and pepper. Cook stirring occasionally about 20 minutes or until kale is tender.
