3 Cups Spicey Hot V8 Juice3 Stalks celery, cut in chunks1 Cup chopped onion1 Cup chopped cucumber1 Cup chopped green bell pepper1 Cup chopped red bell pepper2 Tbsp. lime juice1/2 Tsp salt2 Medium tomatoes, chopped finely3 Tbsp. chopped chives or green onion tops
Measure V8 into a glass or plastic bowl that has a cover. Place celery, onion, cucumber, and bell peppers into a food processor and pulse until they are in small pieces. Pour into bowl with the V8 juice. Add salt, lime juice, tomatoes, and chives (or green onion tops). Cover bowl and refrigerate at least 4 hours or overnight to blend flavors.
