Low-fat Cheese Fries W/ Brocoli

Ingredients
russet potatoes, 2Large Egg white, 1Extra Virgin Olive Oil, 1 tbspSalt, 0.5 tspYellow Cornmeal, 1 tbspGrated parmesian cheese, 1-2 tbspDiced brocoli, 1 oz
Directions
Preheat oven to 400 degrees.
Cut each potatoe into 8 wedges.
Toss the potatoes in a mixing bowl with the egg, oli, diced brocoli, and salt, coating evenly.
Dust the potatoes with cornmeal and spread them in a single layer on a cookie sheet sprayed with oil.
Sprinkle on cheese.
Bake 50-60 mins or untill golden brown.
Makes 4 servings.
