vegetable samosa filling

Ingredients
1 potato finely chopped1 carrot finely chopped2 clove garlic 1 onion chopped1 cup frozen green peas 1 tablespoon vegetable oil 2 teaspoon curry powder Salt & pepper 100 mililiters vegetable broth
Directions
100ml of vegetable stock. Heat the oil in a frying pan, add the onion and garlic, mix in the spices and fry until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 minutes until cooked. fill filo dough .

Cook in oven till filo dough is done.

    Great taste. I added a bit of lemon juice for some tang. I wonder if perhaps there should be flesh added from more than just one potato. It was pretty potato-less compared to most samosa fillings, but delicious! - 6/9/11
