Greek Vegan Salad

Ingredients
1 Bag of Spinach1 cup of cherry tomatos1/4 cup (1 can) sliced Black olives1 large Red Bell Pepper2 Small cucumbers (or 1 large)1 can of Chick peas (1 3/4 cup)4 Tbsps of Vegan Parmesan (1/4 cup ground almonds plus Tbsp of Nutritional yeast) (OR regular Parmesan or feta cheese for non-vegans)Dressing:1/4 cup olive oil1/4 cup lemon juice4 Tbsp of Fresh oreganosalt and pepper to taste
Directions
Blend dressing ingredients in blender.
Chop vegetables and toss.
Pour dressing over ingredients and toss until blended.

    The calorie count is definitely out for this as it was calculated as a single serving which it definitely is not and needs to be amended. This is enough for 8 people. - 5/30/08
