4 oz boneless, skinless chicken breast cooked * and shredded or chopped1/2 large apple (97.8 grams or 3.45 oz) chopped to desired size15 Red grapes (107.8 grams of 3.80 oz) quartered or halved1 small 5" stalk celery finely chopped or to desired size1 oz roasted salted pecans chopped1 Tbs onion finely minced3/4 c mayo or to tasteLemon Juice to taste
Combine all ingredients and chill. Serve on lettuce leaves or on croissants with some extra mayonnaise and lettuce
* I poached the chicken breast in some water with salt, a small piece of bay leaf, a half slice of onion diced, and a slice of lemon. If you bake it just don't let it brown.
