1.25 cup (1 serving) Fiber One Cereal, original 1.33 cup Lactaid FatFree Milk (by BRENDALW4) .5 cup, packed Raisins .5 tsp Vanilla Extract 4 tbsp Crisco Pure Vegetable Oil 1 large Egg, fresh, whole, raw 1.25 cup King Arthur 100% Unbleached White Whole Wheat Flour .5 cup, packed Brown Sugar 3 tsp Baking Powder 0.25 tsp Kosher Salt (by 65PLUS1) 1 tsp Cinnamon, ground
Crush cereal until fine crumbs. In a medium bowl combine the crushed cereal, milk. raisins and vanilla and stir until well mixed. Let it stand for at least 5 minutes or until cereal has softened. Then beat in egg and oil with a fork.
In another bowl, stir the four, brown sugar, baking powder, salt and cinnamon until well mixed. Stir the flour mixture into the cereal mixture just until flour is moistened. (Batter will be lumpy) Spoon batter into muffin cups either sprayed with oil of lined with paper cups. Bake 20 - 25 minutes at 400 or until a toothpick inserted in middle comes out clean. If muffins were baked in paer cup, remove from pan immediately to cooling rack. If muffins were baked in a sprayed pan, leave in pan about 5 minutes, then remove to a cooling rack.
