Zucchini Raisin/Date Cookies

Cream:1 cup butter2 cups brown sugar1 cup white sugarThen add and set aside:4 eggs4 cups shredded zucchiniMix dry ingredients:2 cups whole wheat flour6 cups all-purpose flour4 tsp baking soda4 tsp ground cinnamon2 tsp baking powder2 tsp salt2 tsp ground nutmeg1 tsp ground clovesStir in at end:2 cups raisins2 cups chopped dates
In a mixer cream butter and sugars, then add eggs and beat well, then stir in zucchini.
Separately mix dry ingredients.
Add dry ingredients to wet ingredients and stir till well combined.
Stir in raisins and dates. (Can use either all raisin or all dates if you prefer.)
Drop by rounded teaspoonfuls on a greased baking sheet. Bake at 375 degrees Fahrenheit for 12-15 minutes until golden brown. Cool in pans 2 minutes before removing to a wire rack. Makes 10 dozen. Serving size is one cookie.
