1 box (454g) Catelli Smart Rotini cooked with two chicken OXO cubes1 large cucumber, peeled seeded and chopped2 tomatoes, seeded and chopped1 green pepper, seeded and chopped1 red pepper, seeded and chopped1 small onion (optional)3 stalks of celery, choppedDressing:1/2 cup oil1/2 cup white vinegar1/2 cup sugar1 tsp Dijon mustard1/2 tsp parsley1/2 tsp garlic powder1 tsp. salt1/2 tsp pepper1 tsp celery seed1 tsp grated onion
Chop vegetables into small pieces and toss with drained pasta.
Combine dressing ingredients. Mix together well with whisk. Pour over pasta and veggies. Toss well. Refrigerate overnight for flavors to blend.
Makes about 24 cups.
