Ingredients
32 oz. jicama, cube small1 red Bell Pepper diced2 ears Yellow Corn, scraped off the cob2 stalks Celery, diced1 med. Onion, diced1 Avocavo, diced1/2 cup Tahini2 cloves Garlic, minced1/3 cup Limon Juice1 tbl. Fresh Cilantro1 tsp. cumin1/2 tsp. Chili powder4 tsp. Fresh Dill1 tsp. Sea salt
Directions
1. Mix all ingridiance together
2. Chill for a few hours before serving

    jicama is a root veggie. i don't think it tastes anything like potato - this is more of a raw vegan "potato style" salad. looks good though! - 12/31/08
