Baked chickpeas and tomatoes

Ingredients
1 cup chickpeas 1 15-oz can tomatoes, no salt added1/2 medium onion, chopped1 tsp garlic, minced1 tsp rosemary1 tb olive oil
Directions
Combine ingredients in a small casserole. Bake at 350 for 1 hr. Serve with a slotted spoon. Makes about 3 3/4-cup servings.

    Very easy to make. I found the rosemary to be a little strong. I used fresh cherry tomatoes cooked down a little. Next time I will add paprika and a little hot crushed red peppers. - 11/2/07
