Brown Rice w/ Kale and Bean Sprouts

3 cups prepared Instant Brown Rice Cooking Spray4 tbsp Shallots, chopped 2 cloves Garlic, crushed1 cup Bean sprouts2 cup Kale, chopped 1 cup, Swanson Chicken Broth 99% Fat Free1 tbsp Salt1 tbsp black pepper1 tbsp Onion powder
Prepare instant brown rice as directed (I like using the Success boil-in-bag which yeilds 3 cups). While rice is boiling, spray non-stick skillet with cooking oil (canola or olive oil). Add crushed garlic and shallots to saute for approx. 2 mins. Add kale and bean spouts, stirring with garlic and shallots for a couple of more minutes. Pour in broth (can use vegetable instead of chicken), cover, and let cook until almost all the liquid is gone. Drain water from rice. Add rice to skillet, mixing with kale and sprouts. Season with salt, pepper and onion powder to taste. Continue to cook uncovered until all liquid is gone, stirring occassionally.
Makes approx. 4- 1 cup servings.
