Sweet Potato Pork Stew

Ingredients
1 lb cubed pork tenderloin1 tbsp mustard3 tbsp rice flour1 tbsp brown sugar1 tbsp minced garlic2 tbsp oil1 cup veggtable broth1 small onion cut ( 3/4 cup)2 medium sized sweet potato's1/4 teaspoon salt1/8 teaspoon pepper1 tbsp minced fresh parsley1/3 cup craisins
Directions
Toss pork with mustard and flour, brown sugar in a large resealable plastic bag. Shake to coat pork.

In a large saucepan coated with nonstick cooking spray, cook pork and garlic in oil until pork is browned on all sides. Stir in broth. Bring to a boil. Reduce heat cover and simmer for 15 min.

Stir in the onion, sweet potato (cook in microwave 5 min), salt and pepper. Return to boil. Reduce heat; cover and simmer 15-20 min longer or until meat and vegtables are tender. Stir in parsley.
