Amber's Loaded baked potato

Ingredients
1 baked potato (2-1/3" x 4-3/4")1.5 tbsp chili powder2 tbsp fat free sour cream (such as breakstone sour cream)1 cup mushrooms, cooked
Directions
Preheat overn to 400f

Wash potato completely and pat dry. Poke 4 holes deeply into potato on each side (should be 16 holes). bake for 45 min. When checking for doneness you can stick a knife into it and if the knife comes out without lifeting the potato it's done.
when the potato is almost ready (about 5 min left):
in a med sized skillet add enough olive oil or veggie oil to cover the bottom and heat to about a med-low temp. add mushrooms and sprinkle some chii powder on them.
Cut a large slit into potato and squeeze ends together to open. Add chili powder, sour cream, and mushrooms for a tasty filling lunch!
