Poppy Seed Cookies

Ingredients
1/4 cup of margarine (non hydrogenated), softened1/4 apple sauce (or 1/4 cup of margarine)3/4 cup packed light brown sugar3 tsp Ener-g egg replacer (or 2 eggs)1/2 tsp vanilla extract1/2 tsp grated lemon rind1/3 cup poppy seeds1 cup white flour1 cup whole wheat flour2 tsp baking powder1/2 tsp salt
Directions
Preheat oven to 375 degrees. Lightly spray cookie sheets with cooking spray.

Place margarine and sugar in a bowl and beat at high speed for about 3 minutes. Mix egg replacer according to package directions. Add egg replacer or eggs, beating well. Stir in vanilla, lemon rind and poppy seeds.

Sift flour, baking powder and salt directly into the wet mixture. Mix by hand until completely blended.

Roll small balls out of dough and flatten on cookie sheet. Bake for 10 to 12 minutes, or until lightly browned on the bottom. Cool for 10 minutes.

    Bev, I made them Friday and by today, Wednesday, September 3rd, the leftover cookies had molded. In retrospect, they should be refrigerated. They were fabulous !!!! - 8/29/08
