L.R. Apple muffins with flax and oat bran

Ingredients
6 cups chopped tart apples1 cup sugar3 eggs2 T. oil2/3 cup buttermilk2 tsp. vanilla1-1/2 cups whole wheat flour1 cup oat bran1/2 cup ground flax seed2 tsp. baking soda2 tsp. cinnamon1 tsp. salt1/2 cup chopped walnuts1/2 cup raisins
Directions
Preheat oven to 325. In a large mixing bowl, mix apples and sugar; set aside. Put eggs, oil buttermilk and vanilla in a second bowl and whisk to blend well. In a third bowl, combine dry ingredients.. Stir egg mixture into apple mixture. Then stir flour mixture in. Last of all, stir in raisins and nuts. Spoon into 24 muffin cups. Bake for about 25 minutes or until done. Yield 24 muffins.
