L.R. sweet potato soup

Ingredients
1 T. oil2 cups chopped onion1 cup chopped celery1 cup chopped carrots8 cups peeled and diced sweet potatoes6 cups chicken bouillon2 cups chopped tomato1 tsp. oregano1 tsp. basil1 tsp. thyme2 cups peas2 cups cornsalt and pepper to tastecayenne pepper to tasteabout 2 cups cooked cubed chicken
Directions
Place a large kettle over high heat. Add the oil and let it get hot. Add onion, celery and carrot. Lower heat and saute until crisp-tender. Add remaining ingredients except chicken. Bring to a boil and simmer until sweet potatoes are tender, about 5 minutes. Add chicken and adjust seasoning. Bring back to a boil. Remove from heat and serve. Makes about 17 cups.
