My Favorite Skillet Supper for One (or Two)

Ingredients
4 oz. ground chuck, crumbled1/2 cup (1 small) zucchini, sliced or chopped1/2 of a 5" sweet potato, peeled and cubed1/2 cup (1 small) summer squash, sliced or chopped1/2 cup onion, choppedMrs. Dash (Original or Lemon Pepper) to taste
Directions
Pre-cook the sweet potato cubes in a microwavable dish for 2-3 minutes, until about half cooked. Left over baked sweet potato can be used instead.

Combine meat or meat substitute and vegetables in a large skillet. Add 1-2 Tbsp. water. Sprinkle liberally with Mrs. Dash seasoning. Cook covered over medium heat, stirring occasionally until meat is cooked and vegetables are crisp tender, about 15 minutes.
