Sesame Ginger Coleslaw

2 1lb packages of coleslaw mix (15 cups total)1/4 cup cooking rice wine1/4 cup white wine vinegar2 T light soy sauce2 T sesame oil1 packet Equal (or 2 tsp sugar, etc)2 tsp crushed gingerrootdash pepper
Put cabbage in LARGE container with lid that seals. Combine all other ingredients and mix well (I mix in magic bullet, but container with good lid to manually shake works well too.). Add liquid ingredients to cabbage and seal, tip upside down and back a few times to mix all ingredients. Place in fridge for ingredients to blend. Let sit in fridge at least an hour -- if you can mix it the night before it comes out better (more time for flavors to mix).
Makes ten 1.5 cup servings. Works great with broccoli slaw (or combination of cabbage and broccoli) too! Sprinkle with sesame seeds to serve if desired.
