Wilker Fried Rice

3 cups cooked white rice (or whatever you have on hand)3 slices bacon1 small can sliced mushroom1 cup frozen carrot and pea mixture2 medium green onion, sliced¼ cup diced onions1 egg3 tablespoons soy sauceDash pepper
Heat medium skillet over medium heat. Cook bacon. Remove bacon, crumble. Reserve 1-3 tablespoon grease – depending on how much rice you have. Cook onion in oil. When onion is softened, add mushroom and frozen carrot and peas. Cook for 2 minutes stirring frequently.
Add rice and green onions. Stir till coated. Beat egg in a small bowl. Make a well in the center of the rice, pour in egg. Stir egg in well frequently till almost set. Combine rice mixture with egg mixture, stirring frequently till egg is completely set. Add in bacon and soy sauce, stir to combine, and serve.
