Hearty Veggie Soup

Ingredients
2 cups cabbage chopped2 medium carrots, peeled & chopped1 leek, chopped2 celery stalks, chopped1 cup fresh spinach - chopped3 cans (approx 5.25 cups) vegetable broth1 cooked boneless/skinless chicken breast / cut into small pieces
Directions
Bring stock to boil. Add basil and cabbage, simmer for 10 minutes. Add remaining ingredients except spinach; simmer for 15 minutes.
Add spinach, cook for 5 more minutes until chicken.
Salt and pepper to taste. Serve and enjoy!
